1. Make it part of your routine! It’s hard to pack a balanced and satisfying lunch if you’re constantly trying to make that happen while simultaneously trying to get out the door for the day. Try to find somewhere in your day where packing a lunch could fit stress-free. Maybe you get up 5 minutes earlier and pack it before or after breakfast. Maybe you put it together the night before. Maybe you’re packing lunches for your kids and could pack your own at the same time. Whenever it is, future you will thank you!
2. Make as much as you can ahead of time! This option doesn’t work for everyone, but it will make life super easy for some. On the weekend, think about what you might want to eat for lunch during the week. Then, make as much of it as you can ahead of time. Cut your vegetables, portion nuts and other snacks, hardboil some eggs… the list could go on! The more you have ready to go in your fridge, the less thought and effort you have to put in later.
3. Make a snacky lunch! Who says lunch has to be a sandwich or a salad? (Although these are both great ideas too!) A combination of snacks can make for an easy-to-pack lunch! Try to include at least one fruit and at least one vegetable, a source of protein, and a source of higher fibre carbs. Add in a fun food for a midday pick-me-up and to be more satisfied with your meal!
4. Plan for leftovers! Leftovers can make the absolute easiest lunch. There is nothing better than grabbing a container or two from the fridge and getting on with your day. When you’re making dinner the night before, intentionally cook enough that you can pack a portion for lunch. When lunch time comes around, all you need to do is microwave your meal and grab a fork!
